Ingredients:
- 1 medium red onion, thinly sliced (approx. 10 oz / 280g)
- 1 cup unsweetened rice wine vinegar
- 1/2 cup water
- 1 tsp kosher salt
- 1 tbsp granulated sugar
Instructions:
- Slice the red onion into thin, uniform half moons (approximately 1/8 inch thickness). Note: Uniform slices ensure they pickle at the same rate
- Pack the sliced onions tightly into a clean 1 pint glass mason jar.
- Combine the rice wine vinegar, water, salt, and sugar in a small saucepan.
- Place the mixture over medium heat and stir constantly until the salt and sugar have completely dissolved. Note: Do not let it reach a rolling boil
- Remove the saucepan from the heat immediately.
- Carefully pour the hot brine over the onions in the jar.
- Press the onions down with a spoon until they are completely submerged in the liquid.
- Seal the lid tightly and let the jar sit at room temperature for 30 minutes.
- Transfer the jar of Pickled Onions to the refrigerator.
