Ingredients:

  • 1 medium red onion, thinly sliced (approx. 10 oz / 280g)
  • 1 cup unsweetened rice wine vinegar
  • 1/2 cup water
  • 1 tsp kosher salt
  • 1 tbsp granulated sugar

Instructions:

  1. Slice the red onion into thin, uniform half moons (approximately 1/8 inch thickness). Note: Uniform slices ensure they pickle at the same rate
  2. Pack the sliced onions tightly into a clean 1 pint glass mason jar.
  3. Combine the rice wine vinegar, water, salt, and sugar in a small saucepan.
  4. Place the mixture over medium heat and stir constantly until the salt and sugar have completely dissolved. Note: Do not let it reach a rolling boil
  5. Remove the saucepan from the heat immediately.
  6. Carefully pour the hot brine over the onions in the jar.
  7. Press the onions down with a spoon until they are completely submerged in the liquid.
  8. Seal the lid tightly and let the jar sit at room temperature for 30 minutes.
  9. Transfer the jar of Pickled Onions to the refrigerator.
