Ingredients:

  • 1 (9-inch) frozen pie crust, baked and cooled (227g)
  • 3 cups fresh strawberries, hulled and sliced (450g)
  • 1 package strawberry-flavored gelatin mix (85g)
  • 1 cup water (240ml)
  • 1/4 cup granulated sugar (50g)

Instructions:

  1. Bake the frozen pie crust according to package directions until the edges are a light mahogany color, then let it cool completely to room temperature. Note: This prevents the soggy bottom.
  2. Fill the cooled crust with sliced strawberries, piling them high and mounding them slightly in the center.
  3. Press down gently to remove air gaps until the berries are snug.
  4. In a medium saucepan, combine the water, strawberry gelatin mix, and sugar.
  5. Place the saucepan over medium heat and whisk constantly.
  6. Bring the mixture to a gentle simmer until the gelatin is fully dissolved and the liquid is clear.
  7. Slowly pour the hot glaze over the strawberries, using a spoon to ensure every berry is coated.
  8. Smooth the top with a spatula until the surface is level.
  9. Refrigerate the pie for 3 to 4 hours until the glaze is firm to the touch and the pie is stable.
