Ingredients:

  • 2 lbs boneless skinless chicken breasts
  • 0.5 cup extra virgin olive oil
  • 0.25 cup fresh lemon juice
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 4 cloves fresh garlic, minced
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • 0.5 tsp kosher salt
  • 0.5 tsp freshly cracked black pepper
  • 1 tbsp lemon zest

Instructions:

  1. In a small glass mixing bowl, combine the extra virgin olive oil, lemon juice, soy sauce, and honey. Whisk vigorously until the oil and acid are emulsified.
  2. Stir in the minced garlic, lemon zest, oregano, smoked paprika, salt, and pepper until the spices are evenly distributed.
  3. Pat the chicken dry with paper towels. If using breasts, pound them to an even 3/4 inch thickness.
  4. Place the chicken in a large resealable freezer bag and pour the marinade over it. Massage the bag to ensure every surface is coated.
  5. Seal the bag, removing excess air, and refrigerate for at least 30 minutes (up to 6 hours).
  6. Preheat the grill to medium-high heat (approx. 400°F). Remove chicken from marinade, letting excess drip off.
  7. Place chicken on grates and sear for 5-7 minutes per side until golden brown and charred.
  8. Verify internal temperature reaches 165°F (74°C) using an instant-read thermometer.
  9. Remove from grill and let rest for 5 minutes before slicing.
