Ingredients:
- 2 lbs boneless skinless chicken breasts
- 0.5 cup extra virgin olive oil
- 0.25 cup fresh lemon juice
- 2 tbsp soy sauce
- 1 tbsp honey
- 4 cloves fresh garlic, minced
- 1 tsp dried oregano
- 1 tsp smoked paprika
- 0.5 tsp kosher salt
- 0.5 tsp freshly cracked black pepper
- 1 tbsp lemon zest
Instructions:
- In a small glass mixing bowl, combine the extra virgin olive oil, lemon juice, soy sauce, and honey. Whisk vigorously until the oil and acid are emulsified.
- Stir in the minced garlic, lemon zest, oregano, smoked paprika, salt, and pepper until the spices are evenly distributed.
- Pat the chicken dry with paper towels. If using breasts, pound them to an even 3/4 inch thickness.
- Place the chicken in a large resealable freezer bag and pour the marinade over it. Massage the bag to ensure every surface is coated.
- Seal the bag, removing excess air, and refrigerate for at least 30 minutes (up to 6 hours).
- Preheat the grill to medium-high heat (approx. 400°F). Remove chicken from marinade, letting excess drip off.
- Place chicken on grates and sear for 5-7 minutes per side until golden brown and charred.
- Verify internal temperature reaches 165°F (74°C) using an instant-read thermometer.
- Remove from grill and let rest for 5 minutes before slicing.
