Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 1/2 cup (100g) brown sugar, packed
- 1/4 cup (50g) granulated sugar
- 1/3 cup (80g) pumpkin puree
- 1 large egg, room temperature
- 1 tsp (5ml) vanilla extract
- 2 1/4 cups (280g) all-purpose flour
- 1 tsp (3g) cream of tartar
- 1/2 tsp (3g) baking soda
- 1/2 tsp (3g) salt
- 1 tbsp (6g) pumpkin pie spice
- 1/4 cup (50g) granulated sugar (for coating)
- 1 tbsp (8g) ground cinnamon (for coating)
Instructions:
- Beat the softened butter, brown sugar, and granulated sugar together on medium-high speed until the mixture looks pale and fluffy.
- Stir in the pumpkin puree, egg, and vanilla extract, mixing just until the batter is smooth and velvety.
- In a separate bowl, whisk together the flour, cream of tartar, baking soda, salt, and pumpkin pie spice.
- Gradually add the dry mixture to the wet ingredients on low speed. Stop mixing the moment you see no more streaks of flour.
- Transfer the dough to a bowl and refrigerate for 30 minutes.
- Preheat your oven to 350°F (175°C).
- Scoop about 1.5 tablespoons of dough and roll into a smooth ball between your palms.
- Roll each ball generously in the cinnamon-sugar mixture until fully coated.
- Place balls 2 inches apart on parchment-lined sheets. Bake for 9–11 minutes.
- Remove when edges are set but centers look slightly underdone. Let rest on the pan for 5 minutes before moving to a wire rack.
