Ingredients:

  • 3 large (340g) overripe bananas, mashed
  • 1/2 cup (115g) unsalted butter, melted
  • 3/4 cup (150g) light brown sugar, packed
  • 1 large egg, room temperature
  • 1 tsp (5ml) vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) salt
  • 1 1/2 tsp (4g) ground cinnamon
  • 1/2 tsp (1g) ground nutmeg
  • 1/4 tsp (0.5g) ground cloves
  • 1/2 cup (60g) chopped walnuts
  • 1/2 cup (85g) semi-sweet chocolate chips

Instructions:

  1. Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan with butter or line it with parchment paper.
  2. Mash the overripe bananas in a bowl until smooth with only a few small lumps remaining.
  3. Stir the melted butter into the mashed bananas.
  4. Whisk in the brown sugar, egg, and vanilla extract until the mixture is cohesive and sugar is mostly dissolved.
  5. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  6. Gently pour the dry ingredients into the wet mixture and fold together with a spatula just until no streaks of flour remain.
  7. Fold in the chopped walnuts and chocolate chips.
  8. Pour the batter into the prepared pan and smooth the top with a spatula.
  9. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  10. Cool the bread in the pan for 10 minutes before transferring to a wire rack.
