Ingredients:
- 3 large (340g) overripe bananas, mashed
- 1/2 cup (115g) unsalted butter, melted
- 3/4 cup (150g) light brown sugar, packed
- 1 large egg, room temperature
- 1 tsp (5ml) vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 1 1/2 tsp (4g) ground cinnamon
- 1/2 tsp (1g) ground nutmeg
- 1/4 tsp (0.5g) ground cloves
- 1/2 cup (60g) chopped walnuts
- 1/2 cup (85g) semi-sweet chocolate chips
Instructions:
- Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan with butter or line it with parchment paper.
- Mash the overripe bananas in a bowl until smooth with only a few small lumps remaining.
- Stir the melted butter into the mashed bananas.
- Whisk in the brown sugar, egg, and vanilla extract until the mixture is cohesive and sugar is mostly dissolved.
- In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves.
- Gently pour the dry ingredients into the wet mixture and fold together with a spatula just until no streaks of flour remain.
- Fold in the chopped walnuts and chocolate chips.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Cool the bread in the pan for 10 minutes before transferring to a wire rack.
