Ingredients:
- 2 cups (300g) peeled and diced ripe pears
- 1 tbsp (15ml) lemon juice
- ½ tsp (1g) ground cinnamon
- 1 cup (90g) rolled oats
- 1 cup (125g) whole wheat pastry flour
- ½ cup (115g) coconut oil, softened
- ⅓ cup (65g) coconut sugar
- 1 large egg, room temperature
- 1 tsp (5ml) vanilla extract
- ½ tsp (3g) baking soda
- ½ tsp (3g) ground ginger
- ¼ tsp (1g) ground cloves
- ¼ tsp (1.5g) sea salt
Instructions:
- Place diced pears, lemon juice, and cinnamon in a small saucepan over medium heat.
- Simmer for 8–10 minutes, stirring occasionally, until the pears break down and the liquid reduces into a thick, jam-like paste. Remove from heat and let cool completely.
- In a large bowl, cream together the softened coconut oil and coconut sugar until smooth and pale.
- Beat in the egg and vanilla extract until well combined.
- Fold in the cooled pear reduction until the mixture is velvety.
- Stir in the baking soda, ginger, cloves, and salt.
- Gradually fold in the rolled oats and flour until no dry streaks remain.
- Cover the dough and refrigerate for 30 minutes to prevent spreading.
- Preheat oven to 350°F (175°C) and line baking sheets with parchment.
- Scoop rounded tablespoons of dough onto the sheets, spacing them 2 inches apart.
- Bake for 10–12 minutes, or until the edges are mahogany-colored and the centers are set.
- Let cool on the pan for 5 minutes before transferring to a wire rack.
