Ingredients:
- 2 tbsp Mayonnaise
- 1/2 tsp Yellow mustard
- 1/4 tsp Dried dill weed
- 1/2 tsp Lemon juice
- 1/4 tsp Steak sauce
- 6 oz Sirloin steak, shaved thin
- 1/2 Large yellow onion, thinly slivered
- 1/2 tsp Worcestershire sauce
- 3 tbsp Unsalted butter
- 2 Plain bagels
- 4 Large eggs
- 1 tbsp Whole milk
- 2 Slices American cheese
- Salt to taste
- Cracked black pepper to taste
Instructions:
- In a small bowl, whisk together the mayonnaise, yellow mustard, dried dill, lemon juice, and steak sauce.
- Melt 1 tablespoon of butter in a skillet over medium heat. Add the slivered onions and cook for 8 minutes until they are soft and golden brown.
- Increase heat to medium-high. Add the shaved sirloin to the pan, seasoning with salt and pepper, and 1/2 tsp Worcestershire sauce. Flash-sear for 3 minutes until browned and tender. Combine with the grilled onions.
- Whisk eggs with whole milk. In a separate non-stick skillet, melt 1 tablespoon of butter and cook the eggs in a thin layer, folding them into a square shape to fit the bagel.
- Split and toast the bagels with the remaining butter. To assemble, spread the signature sauce on both sides of the bagel, then layer the folded egg, steak and onion mixture, and a slice of American cheese.
