- 1 lb English cucumber, sliced into ¼ inch rounds

- 1 tsp honey

Instructions:
- Slice the English cucumbers into uniform rounds and the strawberries into quarters to ensure matching sizes. Thinly slice the red onion; optionally, soak slices in ice water for 5 minutes and pat dry to mellow the flavor.
- In a small glass jar with a lid, combine the extra virgin olive oil, balsamic vinegar, lime juice, honey, sea salt, and cracked black pepper. Shake vigorously for 30 seconds until the dressing is opaque and emulsified.
- Place the sliced cucumbers, strawberries, and red onions in a large mixing bowl. Drizzle the prepared dressing over the ingredients and toss gently with tongs.
- Gently fold in the fresh mint leaves and crumbled feta cheese last to prevent bruising the herbs or coloring the cheese.
