Ingredients:

  • 1 lb English cucumber, sliced into ¼ inch rounds
  • 1 lb fresh strawberries, hulled and quartered
  • ¼ cup red onion, thinly sliced into half-moons
  • ¼ cup fresh mint leaves, chiffonade
  • ½ cup crumbled feta cheese (optional)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1 tbsp fresh lime juice
  • 1 tsp honey
  • ¼ tsp sea salt
  • ⅛ tsp cracked black pepper

Instructions:

  1. Slice the English cucumbers into uniform rounds and the strawberries into quarters to ensure matching sizes. Thinly slice the red onion; optionally, soak slices in ice water for 5 minutes and pat dry to mellow the flavor.
  2. In a small glass jar with a lid, combine the extra virgin olive oil, balsamic vinegar, lime juice, honey, sea salt, and cracked black pepper. Shake vigorously for 30 seconds until the dressing is opaque and emulsified.
  3. Place the sliced cucumbers, strawberries, and red onions in a large mixing bowl. Drizzle the prepared dressing over the ingredients and toss gently with tongs.
  4. Gently fold in the fresh mint leaves and crumbled feta cheese last to prevent bruising the herbs or coloring the cheese.
