Ingredients:
- 1 cup (245g) sweet potato puree
- 1/2 cup (115g) unsalted butter, softened
- 1 cup (200g) light brown sugar, packed
- 2 large eggs (100g)
- 1 tsp (5ml) vanilla extract
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1 tsp (2g) ground cinnamon
- 1/2 tsp (1g) ground nutmeg
- 1/2 tsp (3g) salt
- 8 oz (225g) cream cheese, softened
- 1/4 cup (57g) unsalted butter, softened
- 2 cups (240g) powdered sugar
- 1 tsp (5ml) vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C). Grease your pan and line the bottom with parchment paper.
- In a large bowl, cream together the softened butter and brown sugar on medium-high speed for roughly 3 minutes until pale and fluffy.
- Add eggs one at a time, beating well after each addition, then stir in the vanilla extract.
- Fold in the sweet potato puree using a spatula until the batter is a uniform color.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet batter. Mix on low speed only until combined.
- Pour the batter into the prepared pan, smoothing the top with a spatula.
- Bake for 30–35 minutes until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Beat the softened cream cheese and butter together until velvety smooth.
- Sift in the powdered sugar and add vanilla. Whip on high until the frosting is light and airy.
- Spread a generous layer of frosting over the cooled cake.
