Ingredients:

  • 4 large Sweet Potatoes (about 1.8 kg), peeled and cubed
  • 115 g unsalted butter, softened
  • 120 ml heavy cream
  • 2 large eggs, lightly beaten
  • 100 g light brown sugar, packed
  • 30 ml maple syrup (Grade A Dark)
  • 5 ml vanilla extract
  • 5 ml ground cinnamon
  • 5 ml freshly grated nutmeg
  • 5 ml fine sea salt
  • 60 g all-purpose flour (for streusel)
  • 65 g light brown sugar, packed (for streusel)
  • 50 g granulated sugar (for streusel)
  • 5 ml ground cinnamon (for streusel)
  • 55 g unsalted butter, chilled and cubed (for streusel)
  • 110 g pecans, roughly chopped
  • 280 g mini marshmallows

Instructions:

  1. Prep Potatoes: Peel the sweet potatoes and cut them into uniform 1-inch (2.5 cm) chunks.
  2. Cook: Place potatoes in the large pot and cover with cold, salted water. Bring to a boil, then reduce heat and simmer until the potatoes are fork-tender (about 15-20 minutes).
  3. Drain and Cool: Drain the potatoes completely and let them sit in the colander for 5–10 minutes to allow residual steam to escape, preventing a watery mash.
  4. Creating the Streusel Topping: In a medium bowl, whisk together the flour, both sugars, and cinnamon. Add the chilled, cubed butter and cut it into the dry mixture until it resembles coarse crumbs.
  5. Add Pecans: Stir in the chopped pecans. Set the streusel aside.
  6. Mash Potatoes: Transfer the drained potatoes to a large mixing bowl. Mash them thoroughly or use a hand mixer until very smooth.
  7. Mix the Mash: Add the softened butter, brown sugar, maple syrup, salt, cinnamon, and nutmeg to the mashed potatoes. Mix until just combined.
  8. Incorporate Eggs: In a separate small bowl, lightly whisk the eggs, heavy cream, and vanilla. Slowly drizzle this mixture into the potatoes while mixing on low speed until everything is smooth. Do not overmix.
  9. Prepare for Baking: Preheat oven to 350°F (175°C). Grease the 9x13 inch baking dish. Spread the sweet potato mash evenly into the prepared dish.
  10. Initial Bake: Evenly crumble the pecan streusel mixture over the mash. Bake for 30 minutes, or until the mash is set and the streusel is golden brown.
  11. The Marshmallow Finish: Remove the casserole from the oven. Evenly distribute the mini marshmallows over the streusel topping.
  12. Final Bake/Broil: Return the casserole to the oven for 3-5 minutes, or place it under a preheated broiler for 60-90 seconds, watching carefully until the marshmallows are puffed and beautifully golden brown.
  13. Rest and Serve: Allow the casserole to rest for 10-15 minutes before serving.
