Ingredients:
- 3 lbs Sweet Potatoes (Jewel or Garnet), peeled and cubed
- 1/2 cup Unsalted Butter, softened
- 1/2 cup Light Brown Sugar, packed
- 2 Large Eggs, lightly beaten
- 1/4 cup Whole Milk or Half-and-Half
- 1 teaspoon Vanilla Extract
- 1 teaspoon Ground Cinnamon
- 1/2 teaspoon Ground Nutmeg
- 1/2 teaspoon Fine Sea Salt
- 1/2 cup All-Purpose Flour (for streusel)
- 1/3 cup Light Brown Sugar, packed (for streusel)
- 1 cup Pecans, roughly chopped
- 4 tablespoons Unsalted Butter, melted (for streusel)
- 1/8 teaspoon Pinch of Salt (for streusel)
Instructions:
- Preheat your oven to 350°F (175°C). Lightly grease the 9x13 inch casserole dish with butter.
- Place the cubed sweet potatoes in a large saucepan and cover with cold, salted water. Bring to a boil, then reduce heat and simmer until the potatoes are fork-tender (about 15-20 minutes).
- Drain the potatoes thoroughly using a colander, allowing excess steam to escape for a minute or two.
- Transfer the hot potatoes to a large mixing bowl. Mash them until very smooth. (For the best texture, use an electric hand mixer.)
- Add the softened butter, brown sugar, eggs, milk, and vanilla extract to the mashed potatoes. Mix until fully incorporated.
- Whisk in the ground cinnamon, nutmeg, and sea salt. Mix until the base is perfectly smooth and the color is uniform.
- Pour the sweet potato base into the prepared casserole dish and smooth the top with a spatula.
- In a separate medium bowl, combine the flour, brown sugar, chopped pecans, and a pinch of salt. Stir briefly.
- Pour the 4 tablespoons of melted butter over the dry streusel ingredients. Toss or stir with a fork until large, defined crumbs form.
- Evenly distribute the pecan streusel mixture over the sweet potato base, covering the entire surface.
- Bake for 45–50 minutes, or until the sweet potato base is set and the streusel topping is golden brown and bubbling slightly.
- Remove the casserole from the oven and let it rest for 10–15 minutes before serving. This allows the internal filling to set up completely.
