Ingredients:
- 1.5 cups (150g) gingersnap crumbs
- 2 tbsp (12g) melted unsalted butter
- 1 tbsp (8g) oat flour
- 1 pinch (1g) sea salt
- 16 oz (450g) cream cheese, softened
- 1 cup (240g) roasted sweet potato puree
- 0.5 cup (100g) light brown sugar, packed
- 3 large (150g) eggs
- 0.5 cup (120ml) plain Greek yogurt
- 1 tsp (5ml) vanilla extract
- 1 tsp (2g) ground cinnamon
- 0.5 tsp (1g) ground ginger
- 0.25 tsp (1g) ground nutmeg
- 2 tbsp (16g) cornstarch
- 0.25 cup (60ml) maple syrup
- 1 pinch (1g) cinnamon powder
- Fresh mint leaves
Instructions:
- Combine gingersnap crumbs, melted butter, oat flour, and salt in a bowl. Press the mixture firmly into the bottom of a foil-lined springform pan. Bake at 325°F (160°C) for 10 minutes until fragrant, then let it cool completely.
- Beat the softened cream cheese and brown sugar until the mixture is pale and aerated.
- Incorporate the sweet potato puree and Greek yogurt, mixing until the color is a uniform mahogany.
- Add eggs one at a time, followed by the cinnamon, ginger, nutmeg, vanilla, and cornstarch. Mix on low speed just until combined to avoid incorporating too much air.
- Wrap the outside of the springform pan in heavy-duty aluminum foil to waterproof it, then place it in a large roasting pan filled with water (bain-marie) and bake low-and-slow until set.
- Allow the cheesecake to cool and chill for at least 6 hours before removing from the pan.
- Drizzle with maple syrup, dust with cinnamon powder, and garnish with fresh mint leaves before serving.
