Ingredients:

  • 1 lb lean ground turkey (93/7 blend)
  • 16 oz potato gnocchi (shelf-stable or refrigerated)
  • 1 tbsp extra virgin olive oil
  • 1 small yellow onion, finely diced
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • 1.5 cups marinara sauce
  • 1/2 cup fresh mozzarella cheese, shredded or torn
  • Fresh basil leaves, torn for garnish

Instructions:

  1. Heat the olive oil in a 12-inch skillet over medium-high heat. Add the dry gnocchi directly to the pan in a single layer. Sear undisturbed for 2-3 minutes until golden-brown, then remove from the pan and set aside.
  2. In the same skillet, add the ground turkey. Break it apart with a spoon and cook without stirring constantly until a dark, savory crust develops. Add the diced onions and cook until translucent.
  3. Stir in the minced garlic, tomato paste, dried oregano, and red pepper flakes. Cook for 2 minutes until the tomato paste turns a deep mahogany color.
  4. Return the gnocchi to the skillet and add the marinara sauce. Stir to combine and simmer for 5 minutes until the sauce is bubbling and velvety. Sprinkle the 1/2 cup mozzarella over the top. Cover for 1 minute until the cheese is gooey and melted. Finish with fresh basil.
