Ingredients:
- 2 large All-Butter Croissants
- 2 Tbsp full-fat Cream Cheese, softened
- 1 tsp finely minced Fresh Chives
- Salt and Black Pepper, to taste
- 4 rashers Smoked Streaky Bacon
- 3 large Eggs
- 1 Tbsp Milk or Cream (optional)
- 1 tsp Unsalted Butter, divided
- 2 slices Sharp Cheddar Cheese
Instructions:
- Preheat the oven or toaster oven to 350°F (175°C). Carefully slice the croissants in half horizontally, ensuring the hinge is still intact. Set aside.
- Prepare the Spread: In a small bowl, combine the softened cream cheese and minced chives. Season lightly with salt and pepper. Mix until just combined.
- Cook the Bacon: Lay the bacon rashers flat in a cold non-stick skillet. Turn the heat to medium-low and cook slowly, turning occasionally, until crisp and golden brown (about 6-8 minutes). Drain on paper towels and set aside. Wipe out the skillet.
- Prepare the Eggs: Whisk the three eggs in a bowl with the milk (if using) and a pinch of salt and pepper. Whisk until slightly frothy.
- Cook the First Folded Egg: Melt half the butter in the same small skillet over medium-low heat. Pour half of the egg mixture into the pan (reserving the second half for the next sandwich).
- Shape and Set: As the edges begin to set, use the spatula to gently push the cooked egg toward the centre, tilting the pan to allow uncooked egg to flow underneath. Once mostly set but still slightly wet on top, place one slice of cheddar cheese in the centre.
- Fold and Finish: Once the cheese begins to melt and the bottom is golden, fold the egg over itself twice to form a neat, thick square. Slide the cooked egg onto a baking sheet to keep warm. Repeat steps 5-7 for the second portion of egg and cheese.
- Toast the Croissant: Lightly butter the inside cut surfaces of the croissants (optional). Place the opened croissants on the baking sheet alongside the eggs.
- Warm Through: Place the baking sheet in the preheated oven for 3-5 minutes, until the croissants are lightly toasted and the cheese on the egg is gooey.
- Assemble the Sandwich: Remove the croissants from the oven. Spread a generous layer of the Chive Cream Cheese onto both the top and bottom halves of each croissant.
- Stack: Place the folded egg (cheese side up) onto the bottom half of the croissant. Top with two strips of crispy bacon. Crown with the top half of the croissant and serve immediately.
