  • 2 Tbsp Black Pepper (freshly ground)
  • 1 Tbsp Garlic Powder
  • 1 Tbsp Onion Powder
  • 1 Tbsp Chili Powder (mild)
  • 1 tsp Cayenne Pepper

Instructions:

  1. Accurately measure all dry ingredients (salt, brown sugar, paprika, pepper, garlic powder, onion powder, chili powder, and cayenne pepper) into the mixing bowl.
  2. Use a small whisk or fork to thoroughly mix the spices. Break up any clumps of brown sugar and continue whisking until the mixture is uniform in color and texture, ensuring no ingredient pockets remain.
  3. Lightly rub a tiny amount between your fingers and taste. Adjust salt or sugar levels as necessary to meet your personal preference for balance (Optional Step).
  4. Transfer the finished Chicken Rub immediately into a clean, airtight container. Label the container with the date of preparation.
  5. Before cooking, pat the poultry surface very dry. Apply 1 to 2 tablespoons of rub per pound of chicken, pressing firmly into the meat, ensuring coverage is uniform for optimal crust development.
