Ingredients:
- 10 fresh mint leaves
- 1 oz fresh lime juice
- 0.5 oz simple syrup
- 2 oz white rum
- 1 oz full-fat canned coconut milk
- 1 oz cream of coconut
- 2 oz sparkling water
- 1 tbsp pomegranate seeds
- 1 fresh mint sprig
- 0.5 cup crushed ice
Instructions:
- In a cocktail shaker, combine 10 fresh mint leaves, 1 oz lime juice, and 0.5 oz simple syrup. Muddle gently 5–6 times to release essential oils without shredding the leaves.
- Add 2 oz white rum, 1 oz coconut milk, and 1 oz cream of coconut to the shaker. Fill halfway with ice cubes and shake vigorously for 15 seconds until frost forms on the outside.
- Fill a highball glass with crushed ice. Strain the coconut mixture into the glass. Top with 2 oz sparkling water and stir gently.
- Garnish with 1 tbsp pomegranate seeds and a fresh mint sprig before serving.
