Ingredients:

  • 10 fresh mint leaves
  • 1 oz fresh lime juice
  • 0.5 oz simple syrup
  • 2 oz white rum
  • 1 oz full-fat canned coconut milk
  • 1 oz cream of coconut
  • 2 oz sparkling water
  • 1 tbsp pomegranate seeds
  • 1 fresh mint sprig
  • 0.5 cup crushed ice

Instructions:

  1. In a cocktail shaker, combine 10 fresh mint leaves, 1 oz lime juice, and 0.5 oz simple syrup. Muddle gently 5–6 times to release essential oils without shredding the leaves.
  2. Add 2 oz white rum, 1 oz coconut milk, and 1 oz cream of coconut to the shaker. Fill halfway with ice cubes and shake vigorously for 15 seconds until frost forms on the outside.
  3. Fill a highball glass with crushed ice. Strain the coconut mixture into the glass. Top with 2 oz sparkling water and stir gently.
  4. Garnish with 1 tbsp pomegranate seeds and a fresh mint sprig before serving.
