Ingredients:

  • 3 medium overripe bananas (approx. 1 cup mashed)
  • 1 cup grated zucchini (120g)
  • 1/2 cup unsalted butter, melted (113g)
  • 3/4 cup brown sugar (150g)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 3/4 cups all-purpose flour (210g)
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1 cup semi-sweet chocolate chips (170g)

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line it with parchment paper.
  2. Grate the zucchini and mash the bananas until smooth.
  3. Whisk the melted butter and brown sugar together until combined.
  4. Stir the mashed bananas, grated zucchini, room-temperature egg, and vanilla extract into the butter mixture.
  5. In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon.
  6. Fold the dry ingredients into the wet batter using a spatula, stopping as soon as no flour streaks remain.
  7. Toss the semi-sweet chocolate chips in a small amount of the flour mixture, then gently fold them into the batter.
  8. Pour the batter into the prepared loaf pan and bake for 65-75 minutes, or until a toothpick inserted in the center comes out with just a few moist crumbs.
