Ingredients:
- 3 medium overripe bananas (approx. 1 cup mashed)
- 1 cup grated zucchini (120g)
- 1/2 cup unsalted butter, melted (113g)
- 3/4 cup brown sugar (150g)
- 1 large egg
- 1 tsp vanilla extract
- 1 3/4 cups all-purpose flour (210g)
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1 cup semi-sweet chocolate chips (170g)
Instructions:
- Preheat the oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line it with parchment paper.
- Grate the zucchini and mash the bananas until smooth.
- Whisk the melted butter and brown sugar together until combined.
- Stir the mashed bananas, grated zucchini, room-temperature egg, and vanilla extract into the butter mixture.
- In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon.
- Fold the dry ingredients into the wet batter using a spatula, stopping as soon as no flour streaks remain.
- Toss the semi-sweet chocolate chips in a small amount of the flour mixture, then gently fold them into the batter.
- Pour the batter into the prepared loaf pan and bake for 65-75 minutes, or until a toothpick inserted in the center comes out with just a few moist crumbs.
