Ingredients:

  • 4 salmon fillets (170g each)
  • 2 tbsp (28g) unsalted butter, melted
  • 1 tbsp (15ml) extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 large lemon: Half juiced, half sliced into rounds
  • 0.5 tsp fine sea salt
  • 0.25 tsp cracked black pepper
  • 1 tsp fresh parsley, chopped

Instructions:

  1. Preheat your oven to 204°C (400°F).
  2. Line a baking sheet with parchment paper or a silicone mat.
  3. Pat the 4 salmon fillets completely dry with paper towels.
  4. Whisk together 28g melted butter, 15ml olive oil, minced garlic, lemon juice, salt, and pepper in a small bowl.
  5. Place the fillets on the prepared pan, skin side down.
  6. Brush the garlic butter mixture generously over each fillet. Until the tops are completely coated and glistening.
  7. Top each piece with a lemon slice for extra aroma and protection from the heat.
  8. Bake for 12-15 minutes until the fish flakes easily with a fork and looks opaque.
  9. Check the internal temperature; it should hit 60°C (140°F) for medium or 63°C (145°F) for well done.
  10. Rest the fish for 3-5 minutes before serving.
