Ingredients:
- 3 large overripe bananas, mashed (approx. 300g)
- 1/2 cup (113g) unsalted butter, melted and cooled
- 3/4 cup (150g) packed light brown sugar
- 1 large egg, room temperature
- 1 tsp (5ml) vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 1 tsp (2g) ground cinnamon
- 3/4 cup (85g) chopped walnuts, toasted
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan with butter or non-stick spray and line the bottom and two long sides with parchment paper to create a sling for easy removal.
- In a large bowl, mash the overripe bananas with a fork or potato masher until mostly smooth. Whisk in the melted butter, brown sugar, egg, and vanilla extract until the mixture is velvety and well-combined.
- In a separate medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Gently fold the dry ingredients into the wet banana mixture using a silicone spatula, stopping as soon as no streaks of flour remain to avoid overmixing.
- Gently fold in the toasted walnuts until evenly distributed. Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 50 to 60 minutes. At 50 minutes, check with a toothpick; it should come out clean or with a few moist crumbs. Let the bread cool in the pan for 10 minutes before lifting it onto a wire rack using the parchment sling.
