Ingredients:

  • 2.5 cups Old Fashioned Rolled Oats (225g)
  • 1 cup Toasted Puffed Rice Cereal (30g)
  • 0.5 teaspoon Fine Sea Salt
  • 0.5 cup Honey (170g)
  • 0.25 cup Unsalted Butter (55g)
  • 0.25 cup Packed Brown Sugar (50g)
  • 1 teaspoon Pure Vanilla Extract
  • 0.5 cup Mini Chocolate Chips (90g)
  • 2 tablespoons Flax seeds (optional, 20g)

Instructions:

  1. Line your 20cm square pan with parchment paper, leaving an overhang on the sides.
  2. Mix the 225g oats, 30g puffed rice, salt, and flax seeds in a large bowl.
  3. Combine the 170g honey, 55g butter, and 50g brown sugar in a saucepan.
  4. Heat over medium heat until the mixture begins to sizzle and bubble vigorously.
  5. Boil for exactly 60 seconds while stirring constantly.
  6. Remove from heat and immediately stir in the vanilla extract.
  7. Pour the hot syrup over the dry oat mixture and stir until every oat is glistening and coated.
  8. Cool the mixture for 5 minutes before folding in the mini chocolate chips.
  9. Press the mixture firmly into the prepared pan using the back of a greased spatula.
  10. Chill in the refrigerator for at least 2 hours until the bars are firm to the touch.
