Ingredients:
- 2.5 cups (310g) all-purpose flour
- 1 tsp (6g) salt
- 1 tbsp (8g) granulated sugar
- 1 cup (225g) unsalted butter, chilled and cubed
- 7 tbsp (105ml) ice water
- 3 lbs (1.3kg) apples, peeled and sliced
- 0.75 cup (150g) granulated sugar
- 2 tbsp (16g) cornstarch
- 1 tbsp (8g) ground cinnamon
- 0.25 tsp (1.5g) ground nutmeg
- 1 tbsp (15ml) lemon juice
- 1 tbsp (15g) unsalted butter, melted
- 1 cup (125g) all-purpose flour
- 1 cup (200g) packed light brown sugar
- 0.5 cup (115g) unsalted butter, cold and cubed
- 1 tsp (2g) ground cinnamon
- 0.5 cup (60g) chopped pecans
Instructions:
- Pulse flour, salt, and sugar in a food processor.
- Add chilled butter cubes and pulse until the mixture resembles coarse crumbs with pea-sized chunks remaining.
- Drizzle in ice water one tablespoon at a time, pulsing until the dough just begins to clump together.
- Press dough into a disk, wrap in plastic, and refrigerate for at least 1 hour.
- Roll dough to a 12-inch circle on a floured surface and press into a 9-inch pie pan, trimming edges.
- In a large bowl, combine sliced apples, lemon juice, and melted butter.
- Stir in sugar, cornstarch, cinnamon, and nutmeg until apples are evenly coated.
- Pile the apples into the chilled crust, mounding them slightly in the center.
- Rub cold butter into flour, brown sugar, and cinnamon using fingers until clumps form, then fold in the pecans.
- Sprinkle the crumble evenly over the apples.
- Preheat oven to 425°F (220°C) and bake for 15 minutes to set the crust.
- Reduce heat to 350°F (175°C) and bake for another 45–50 minutes until the topping is deep mahogany brown.
