Ingredients:
- 2 lbs red potatoes, scrubbed and quartered
- 3 tbsp olive oil
- 2 tbsp unsalted butter, melted
- 1/2 cup grated Parmesan cheese
- 3 cloves fresh garlic, minced
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 2 tbsp fresh parsley, chopped
Instructions:
- Preheat the oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
- Cut the red potatoes into uniform quarters and pat them thoroughly dry with paper towels to remove surface moisture.
- In a large mixing bowl, combine the dried potatoes with olive oil and melted butter, tossing until every surface is glistening.
- Sprinkle the grated Parmesan cheese, minced garlic, garlic powder, smoked paprika, salt, and black pepper over the potatoes.
- Toss gently but thoroughly until the cheese and spices form a thin, tacky paste on the surface of the potatoes.
- Spread the potatoes in a single layer on the prepared baking sheet, ensuring they are not touching to allow for proper air circulation.
- Bake for 25–30 minutes until the edges are deep golden brown and the cheese is crisp.
- Garnish with chopped fresh parsley before serving.
