  • 1 cup boiling water
  • 1/2 cup granulated sugar
  • 1 tbsp cornstarch

Instructions:

  1. Ensure the pre-baked pie crust is completely cooled to room temperature.
  2. In a medium saucepan, whisk together boiling water, strawberry gelatin, and granulated sugar.
  3. Bring the mixture to a gentle simmer over medium heat until the sugar is fully dissolved and the liquid is clear.
  4. Create a slurry by mixing cornstarch with a tablespoon of cold water, then whisk it into the simmering glaze. Stir constantly until the mixture thickens and looks like a heavy syrup.
  5. Toss the hulled and halved strawberries with lemon juice in a large mixing bowl.
  6. Arrange the strawberries tightly in the prepared pie crust, ensuring no large gaps.
  7. Slowly pour the hot glaze over the berries, ensuring every strawberry is fully coated.
  8. Place the pie in the refrigerator and chill for at least 4 hours until the glaze is firm and doesn't jiggle when shaken.
