Ingredients:
- 6 cups Apples (Mix of Granny Smith and Honeycrisp), peeled and sliced 1/4 inch thick
- 3/4 cup Light brown sugar, packed
- 1 tbsp Fresh lemon juice
- 1 tsp Ground cinnamon
- 1/4 tsp Freshly grated nutmeg
- 1/2 cup Unsalted butter (1 stick)
- 1 cup Almond Flour
- 1 cup Granulated white sugar
- 1 tbsp Baking powder
- 1/4 tsp Fine sea salt
- 3/4 cup Coconut Milk (room temperature)
- 1/2 cup Rolled oats
- 1/2 cup Sliced Almonds
Instructions:
- Place the stick of butter in a 9x13 inch baking dish. Place the dish in the oven and preheat to 375°F (190°C). Allow the butter to melt until bubbling and slightly nutty in aroma.
- In a large mixing bowl, whisk together the almond flour, granulated sugar, baking powder, and sea salt. Gently pour in the room temperature coconut milk and whisk until just combined; do not overmix.
- In a separate bowl, toss the sliced apples with the packed brown sugar, lemon juice, cinnamon, and nutmeg until the fruit is well-coated.
- Remove the hot baking dish from the oven. Pour the batter directly over the melted butter. Do not stir.
- Spoon the spiced apple mixture evenly over the batter. Sprinkle the rolled oats and sliced almonds over the top.
- Bake for 40 minutes or until the topping has risen through the fruit and is golden brown with a crisp, shattering texture.
