Ingredients:

  • 6 cups Apples (Mix of Granny Smith and Honeycrisp), peeled and sliced 1/4 inch thick
  • 3/4 cup Light brown sugar, packed
  • 1 tbsp Fresh lemon juice
  • 1 tsp Ground cinnamon
  • 1/4 tsp Freshly grated nutmeg
  • 1/2 cup Unsalted butter (1 stick)
  • 1 cup Almond Flour
  • 1 cup Granulated white sugar
  • 1 tbsp Baking powder
  • 1/4 tsp Fine sea salt
  • 3/4 cup Coconut Milk (room temperature)
  • 1/2 cup Rolled oats
  • 1/2 cup Sliced Almonds

Instructions:

  1. Place the stick of butter in a 9x13 inch baking dish. Place the dish in the oven and preheat to 375°F (190°C). Allow the butter to melt until bubbling and slightly nutty in aroma.
  2. In a large mixing bowl, whisk together the almond flour, granulated sugar, baking powder, and sea salt. Gently pour in the room temperature coconut milk and whisk until just combined; do not overmix.
  3. In a separate bowl, toss the sliced apples with the packed brown sugar, lemon juice, cinnamon, and nutmeg until the fruit is well-coated.
  4. Remove the hot baking dish from the oven. Pour the batter directly over the melted butter. Do not stir.
  5. Spoon the spiced apple mixture evenly over the batter. Sprinkle the rolled oats and sliced almonds over the top.
  6. Bake for 40 minutes or until the topping has risen through the fruit and is golden brown with a crisp, shattering texture.
