Ingredients:

  • 1/2 cup apple cider vinegar
  • 1/4 cup water
  • 1/3 cup granulated sugar
  • 1 tsp sea salt
  • 1/2 tsp turmeric powder
  • 1/2 cup yellow mustard seeds
  • 1 clove garlic, smashed
  • 1/2 tsp black peppercorns

Instructions:

  1. Rinse the mustard seeds in a fine-mesh strainer under cold water to remove surface dust and loose husks.
  2. Combine apple cider vinegar, water, granulated sugar, sea salt, and turmeric powder in a small stainless steel saucepan.
  3. Bring the brine to a gentle boil over medium heat, stirring until the sugar is completely dissolved.
  4. Stir in the rinsed mustard seeds, smashed garlic, and black peppercorns.
  5. Reduce heat to low and simmer uncovered for 20–30 minutes until seeds are plump and translucent and the liquid reduces to a syrupy glaze.
  6. Remove the pan from heat and let the mixture cool for 10 minutes.
  7. Use a slotted spoon to transfer the seeds into a clean glass jar, then pour the remaining brine over the top.
