Ingredients:
- 1/2 cup apple cider vinegar
- 1/4 cup water
- 1/3 cup granulated sugar
- 1 tsp sea salt
- 1/2 tsp turmeric powder
- 1/2 cup yellow mustard seeds
- 1 clove garlic, smashed
- 1/2 tsp black peppercorns
Instructions:
- Rinse the mustard seeds in a fine-mesh strainer under cold water to remove surface dust and loose husks.
- Combine apple cider vinegar, water, granulated sugar, sea salt, and turmeric powder in a small stainless steel saucepan.
- Bring the brine to a gentle boil over medium heat, stirring until the sugar is completely dissolved.
- Stir in the rinsed mustard seeds, smashed garlic, and black peppercorns.
- Reduce heat to low and simmer uncovered for 20–30 minutes until seeds are plump and translucent and the liquid reduces to a syrupy glaze.
- Remove the pan from heat and let the mixture cool for 10 minutes.
- Use a slotted spoon to transfer the seeds into a clean glass jar, then pour the remaining brine over the top.
