Step- 1. Prepare the Tomatoes

Step- 2. Blanch and Peel

  • Once cooled, peel off the skin starting from the “X” you made earlier.

Step- 3. Blend and Strain

  • Cut the peeled tomatoes into quarters and remove any seeds.
  • In a blender or food processor, puree the tomato quarters in batches until smooth.
  • If you desire extra acidity, add 1 tablespoon of lemon juice to each quart jar.

Step- 4. Cook the Juice

  • Pour the tomato puree into a large stockpot.
  • Bring it to a simmer over medium heat, stirring frequently.
  • Simmer for about 5-10 minutes, until the juice is heated through.

Step- 5. Can the Juice

  • While the juice is simmering, prepare your canning jars by washing and sterilizing them.
  • Fill each jar with the hot tomato juice, leaving about 1/2-inch headspace at the top.
  • Wipe the jar rims to ensure a clean seal, then place the lids and bands on tightly.

Step- 6. Process in a Water Bath

  • Use a water bath canner to process the jars. Make sure they are completely submerged in boiling water.
  • Process for 35 minutes for quart jars.

Step- 7. Cool and Store

  • Carefully remove the jars from the water bath using a jar lifter and place them on a clean, dry towel.
  • Allow the jars to cool completely, and you’ll hear the satisfying “pop” of sealed lids.
  • Store in a cool, dark place for up to a year.
