Prepare time: 30 minutes 

Ingredients

  • 3 cups of flour
  • 1/4 teaspoon baking soda
  • 1 cup unsalted butter, room temperature
  • 1 cup sugar
  • 2 eggs, room temperature
  • 3 tablespoons skim milk or orange juice 

Instructions

Step 1. Preheat oven to 350 degrees F.

Step 2. In a large mixing bowl, add sugar and butter. Beat with a mixer on medium speed until smooth and creamy, about 1-2 minutes.

Step 5. Add 1/3 of the flour mixture to the wet mixture, using a spatula or wooden spoon, stir until just combined.

Step 6. Add another 1/3 of the flour mixture and gently fold in with the spatula or wooden spoon just until incorporated. Repeat with last third of flour mixture and continue to gently fold in until all lumps are gone.

Step 7. Cover dough with plastic wrap or damp tea towel and let rest for 10 minutes before rolling out into cookies.

Step 8. Using a small Wilton 1/2-inch cookie cutter or a drinking glass, cut cookies.

Step 9. Place the cookies on cookie sheet lined with parchment paper and bake for 8-10 minutes or until cookies have brown edges.
